The Schertzer Brewery Home Page
Wilkommen to the Schertzer Brewery home page. The Schertzer Brewery is an award-winning home brewery in Schertz, Texas. I brew 10 gallons a months until we are flooded with beer.
Current beer flood stage: Below bankfull, but rising.
Beer brewed espressly for family and tavern trade.
Currently on tap (in the homebrewery (a.k.a., my home office - who else has a full size kegerator next to their computer desk?)):
Oktoberfest (Made from the second runnings of a Dunkle and a Dopplebock)
Lagering:
German Pilsner (using Ayinger and Euro Lager yeast)
German Pilsner (using Euro Lager yeast)
South German Pilsner (using Ayinger yeast)
Classic American Pilsner (CAP)
Munich Dunkle (a possible candidate for my entry in the MCAB VI - Euro Dark Lager category)
Dopplebock
Fermenting:
Schwarzbier (Ayinger yeast - the other candidate for my MCAB VI entry - Euro Dark Lager category)
North German Pils (Danish Lager yeast)
Planned (to be brewed October 11, 2003):
Weizen
Roggen
Next Party in the tavern brewery (a.k.a. our house):
Schertzer Oktoberfest - October 4th
Food: Soft Pretzels, real Bratwursts, various other German items, and the usual Filipino fare
On Tap: German Pilsner and Munich Dunkle
Backup Keg: German Pilsner and Oktoberfest
Interesting note: I scored 7 sacks of well-modified Moravian and a sack of Munich malt (their last sack of Munich) right when St. Pats (up the road in Austin) announced they will no longer sell brewing ingredients. Although I'm set for the next 2 years, it looks like I will be able to get decent prices on grain and hops through Bulk Homebrew Supply, the wholesale arm of Austin Homebrew Supply.
Upcoming competitions to enter:
Spooky Brew Review (Pils, CAP, Dunkle)
Music City Brew-off (Pils, CAP, Dunkle)
MCAB VI (Schwarzbier or Dunkle)

#One of these days, I'll get around to making this Web page more interesting and colorful. It's really sad that someone who develops computer systems for a living has such a drab Web presence...

Long-term goal of the Schertzer brewery is to relocate (and go commercial) into a brew-pub restaurant somewhere in Schertz (due to the new water supply) with initial thoughts of having it along IH35. First crack at a name is the Schertzer Brewery Restaurant. Preparing to put together a draft restaurant business plan. We'll see if it would be worth the risk. There are no other brew-pubs in this area, although there are a bunch of restaurants down along IH35 in Selma - and they're all doing extremely well. The closest is over 20 miles away in downtown San Antonio (what locals go downtown?). Many of the Schertz locals are, or were, military who may have been stationed or traveled to Germany. The primary beers would be German Lagers with a few ales for the hopheads who were stationed in England. Timeframe 2 to 6 years out - we'll see.
Schertzer Brewery Restaurant (8 taps planned)
- Classic American Pilsner (pre-prohibition)
- German Pilsner
- Czech Pilsner
- Oktoberfest
- Hoppy Pale Ale
- ???
- Seasonal Lager
- Seasonal Ale
